Dashe uses 30-year-old vines from Guinness McFadden’s farm in the southeastern end of Mendocino County, organically grown and planted in rocky, chalky soil. Golden in color and thick in texture, the wine has lovely acidity and is definitely dry, austere and very Germanic, with a nutty earthiness.
