Once the first whiff of yeast has worn off, a very pure, linear procession of citrus flavors presents itself: from the yellowish green of grapefruit to the greenish orange of a tangy tangerine, always with a deeper, more resonant core of earth and stone. The zestiness glistens on the surface, the tightly closed, still earthy fruit broods at the core. Wait for it to explode. Drink 2018–2028.
